Cole Slaw Dressing

3 tblspn Salad oil

2 tblspn flour

2 tblspn sugar

1 1/4 tsp. salt

1 tsp. prepared mustard

speck cayenne pepper

1 cup milk

6 tblspn lemon juice (or vinegar)

2 eggs, slightly beaten

 

Thourghly mix first 7 ingredients.  Place in double boiler top. cook while stirring constantly, over boiling water until thinckening.  Gradually add combined lemon juice and eggs while stirring.  Cook, stirring over hot - not boiling- water until it is thickened.

 

Put 4 cups raw shredded green cabbage into a large bowl, add 3/4 cup hot or cooked salad dressing (above) toss the cabbage and salad dressing together until well mixed.  add one tablespoon minced onion and one tbsp green pepper, if desired.
